Salted Vegetable Soup with Egg Tofu and Chicken

INGREDIENTS
Chicken- One by One Chicken Drumstick
- 500g (half pack) Sadia One by One Chicken
- Drumstick
- 1.6L water
- 2 medium tomatoes (cut into wedges)
- 14g ginger (thinly sliced)
- 2 salted plums (flatten)
- 300g egg tofu (sliced)
- 300g salted vegetables (cut into chunks, washed and soaked for 15 minutes)
- 1 Tbsp fish sauce
- 1 Tbsp sesame oil
- ¼ tsp ground white pepper
- 1 stalk scallions (whites and greens separated, chopped)
METHOD
- Place the thawed Sadia One by One Chicken Drumstick into a large pot and bring to a boil. Reduce the heat and simmer for 30 minutes, or until the chicken is tender.
- Add the tomatoes, ginger, salted plums, salted vegetables, and scallion whites. Bring the soup back to a boil, then simmer for another 15 minutes.
- Stir in fish sauce, sesame oil, and ground white pepper. Gently add egg tofu and let them heat through.
- Garnish with scallion greens and serve immediately
