Salted Vegetable Soup with Egg Tofu and Chicken

INGREDIENTS

  • One by One Chicken Drumstick
Ingredients
  • 500g (half pack) Sadia One by One Chicken
  • Drumstick
  • 1.6L water
  • 2 medium tomatoes (cut into wedges)
  • 14g ginger (thinly sliced)
  • 2 salted plums (flatten)
  • 300g egg tofu (sliced)
  • 300g salted vegetables (cut into chunks, washed and soaked for 15 minutes)
  • 1 Tbsp fish sauce
  • 1 Tbsp sesame oil
  • ¼ tsp ground white pepper
  • 1 stalk scallions (whites and greens separated, chopped)

METHOD

  1. Place the thawed Sadia One by One Chicken Drumstick into a large pot and bring to a boil. Reduce the heat and simmer for 30 minutes, or until the chicken is tender.
  2. Add the tomatoes, ginger, salted plums, salted vegetables, and scallion whites. Bring the soup back to a boil, then simmer for another 15 minutes.
  3. Stir in fish sauce, sesame oil, and ground white pepper. Gently add egg tofu and let them heat through.
  4. Garnish with scallion greens and serve immediately
