Spicy Beef and Capsicum Stir-Fry

INGREDIENTS

  • 400g Sadia Beef Stir-Fry
  • 3 cloves garlic, minced
  • 2 slices of ginger, minced
  • 220ml coconut milk
  • 2 tbsp sugar
  • 1 tbsp Sriracha chilli sauce
  • 1/2 tsp grated lime zest
  • 2 tbsp lime juice
  • 2 tbsp canola oil
  • 1 large sweet red capsicum, julienned
  • 1/2 red onion, sliced
  • 2 stalks spring onions, sliced
  • Salt and Pepper to taste

METHOD

  1. In a large bowl, marinate beef with ginger, 2 garlic cloves, pepper and 1/2 teaspoon salt for at least 15 minutes
  2. In a small bowl, whisk coconut milk, sugar, chili sauce, lime zest, lime juice and salt until throughly incorporated
  3. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add beef and stir-fry until no longer pink, 2-3 minutes. Remove from pan
  4. Stir-fry red pepper, red onion, jalapeno and remaining clove of garlic in remaining oil just until vegetables are crisp-tender, 2-3 minutes. 
  5. Stir in coconut milk mixture; heat through. Add beef, stirring occasionally
  6. Garnish with spring onions
  7. Serve hot with steamed white rice
