Chicken Adobo

INGREDIENTS
Chicken- One by One Chicken Fillet
- 3 garlic cloves (minced)
- 85ml light soy sauce
- 110ml white vinegar
- 4 bay leaves
- 6 Sadia One by One Chicken Fillet
- 2 Tbsp cooking oil
- 3 garlic cloves (minced)
- 1 small brown onion (diced)
- 370ml water
- 2 Tbsp brown sugar
- 1 Tbsp whole black pepper
- Green onions (sliced; to garnish)
METHOD
- In a large bowl, combine all the Sadia One by One Chicken Fillet and marinade ingredients. Cover and let it marinate for at least 20 minutes.
- Heat 1 Tbsp of cooking oil in a large skillet over high heat. Remove the chicken from the marinade (reserve the marinade) and sear for about 1 minute on each side, until lightly browned. Transfer the chicken to a plate and set aside.
- Add the remaining oil to the same skillet. Sauté the garlic and onion for about 1-2 minutes, until fragrant and softened.
- Pour in the reserved marinade, water, brown sugar, and whole black pepper. Bring to a gentle boil, then reduce heat to medium-high. Let it simmer for 5 minutes.
- Return the chicken to the skillet. Simmer uncovered for 20-25 minutes, turning once around the 15-minute mark. Continue cooking until the chicken is tender and the sauce has reduced to a thick, glossy, jam-like consistency.
- Plate the chicken with plenty of sauce spooned over the top and serve.
