Moroccan-Style Braised Chicken

INGREDIENTS
Chicken- One by One Chicken Drumstick
- 4 Sadia One by One Chicken Drumstick
- ½ Tbsp cooking oil
- ½ large yellow onion (halved and thinly sliced)
- 2 garlic cloves (minced)
- ½ tsp paprika
- ½ tsp ground cumin
- ¼ tsp ground cayenne pepper
- ¼ tsp ground ginger
- ¼ tsp ground coriander
- ¼ tsp ground cinnamon
- 1 Tbsp all-purpose flour
- 200 ml chicken broth
- 1 Tbsp honey
- ½ lemon (zested and juiced)
- 1 large carrot (peeled and cut into ½-inch-thick
- coins)
- 35g green olives (pitted and halved)
- 1 Tbsp fresh cilantro leaves (chopped)
- Salt and ground black pepper (adjust to taste)
METHOD
- Season One by One Chicken Drumstick with salt and pepper.
- Heat the oil in a large pan over medium–high heat. Sear the chicken until golden brown, then remove and set aside.
- Reduce heat to medium. Cook onions until lightly browned, then add garlic and cook until fragrant. Stir in dry spices and flour for a few seconds.
- Add chicken broth, honey, and lemon zest. Return the chicken with any juices, add the carrots, cover, and simmer until the chicken is cooked through and the carrots are tender-crisp.
- Stir in the olives, adjust seasoning, and add lemon juice to taste. Garnish with cilantro and serve.
