Moroccan-Style Braised Chicken

INGREDIENTS

  • One by One Chicken Drumstick
Ingredients
  • 4 Sadia One by One Chicken Drumstick
  • ½ Tbsp cooking oil
  • ½ large yellow onion (halved and thinly sliced)
  • 2 garlic cloves (minced)
  • ½ tsp paprika
  • ½ tsp ground cumin
  • ¼ tsp ground cayenne pepper
  • ¼ tsp ground ginger
  • ¼ tsp ground coriander
  • ¼ tsp ground cinnamon
  • 1 Tbsp all-purpose flour
  • 200 ml chicken broth
  • 1 Tbsp honey
  • ½ lemon (zested and juiced)
  • 1 large carrot (peeled and cut into ½-inch-thick
  • coins)
  • 35g green olives (pitted and halved)
  • 1 Tbsp fresh cilantro leaves (chopped)
  • Salt and ground black pepper (adjust to taste)

METHOD

  1. Season One by One Chicken Drumstick with salt and pepper.
  2. Heat the oil in a large pan over medium–high heat. Sear the chicken until golden brown, then remove and set aside.
  3. Reduce heat to medium. Cook onions until lightly browned, then add garlic and cook until fragrant. Stir in dry spices and flour for a few seconds.
  4. Add chicken broth, honey, and lemon zest. Return the chicken with any juices, add the carrots, cover, and simmer until the chicken is cooked through and the carrots are tender-crisp.
  5. Stir in the olives, adjust seasoning, and add lemon juice to taste. Garnish with cilantro and serve.
