Frango com Quiabo (Chicken with Lady Fingers)

INGREDIENTS

  • Chicken Thigh
Ingredients
  • Sadia Chicken Thigh
  • 2 garlic cloves (crushed)
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Cooking oil
  • 300g lady fingers (washed, dried, sliced into rounds about 1-2cm each)
  • 1 medium onion (chopped)
  • 230ml boiling water
  • Chives (chopped)

METHOD

  1. Season the Sadia Chicken Thighs with garlic, paprika, salt, and pepper. Marinate in the refrigerator for 15 minutes.
  2. Heat a large pan over medium heat with cooking oil. Sauté the okra for 10-15 minutes until it's no longer as slimy. Strain off the excess oil and set the okra aside.
  3. Heat the same pan over medium heat with some fresh cooking oil. Add the marinated chicken and onion, and sauté until the chicken is golden brown.
  4. Add 230ml of boiling water, or just enough to almost cover the chicken. Simmer for 20 minutes, until the chicken is tender.
  5. Add the okra and let it cook until it thickens. If there is too much broth, increase the heat and let it dry out a little more.
  6. Add chives, and season with salt and black pepper to taste. Serve hot with cooked rice, if desired.
