Frango com Quiabo (Chicken with Lady Fingers)

INGREDIENTS
Chicken- Chicken Thigh
- Sadia Chicken Thigh
- 2 garlic cloves (crushed)
- ½ tsp paprika
- Salt and black pepper to taste
- Cooking oil
- 300g lady fingers (washed, dried, sliced into rounds about 1-2cm each)
- 1 medium onion (chopped)
- 230ml boiling water
- Chives (chopped)
METHOD
- Season the Sadia Chicken Thighs with garlic, paprika, salt, and pepper. Marinate in the refrigerator for 15 minutes.
- Heat a large pan over medium heat with cooking oil. Sauté the okra for 10-15 minutes until it's no longer as slimy. Strain off the excess oil and set the okra aside.
- Heat the same pan over medium heat with some fresh cooking oil. Add the marinated chicken and onion, and sauté until the chicken is golden brown.
- Add 230ml of boiling water, or just enough to almost cover the chicken. Simmer for 20 minutes, until the chicken is tender.
- Add the okra and let it cook until it thickens. If there is too much broth, increase the heat and let it dry out a little more.
- Add chives, and season with salt and black pepper to taste. Serve hot with cooked rice, if desired.
