Christmas Air-Fryer Chicken

INGREDIENTS

Ingredients
  • 1kg whole chicken
  • 85g butter (unsalted)
  • 2 garlic cloves (minced)
  • ¾ Tbsp dried thyme
  • 1½ tsp lemon zest
  • ¾ tsp salt
  • ⅓ tsp pepper
  • 2 potatoes (peeled and cubed)
  • 1 brinjal (peeled and cubed)
  • 2 rosemary sprigs

METHOD

  1. Mix the butter, garlic, dried thyme, lemon zest, salt, and pepper together in a bowl until well combined.
  2. Pat the chicken dry with paper towels. Carefully create pockets between the chicken's skin and meat using your hands. Spread the prepared butter under the skin, making sure to cover both breasts and legs. Optionally, use butcher's twine to tie the ends of the legs together.
  3. Spray the air fryer basket generously with cooking spray. Place the chicken inside, breast side down. Cook at 180°C for 30 minutes.
  4. Carefully flip the chicken so the breast side is up. Continue cooking for another 30 minutes, or until an instant-read thermometer inserted into the thickest part of the chicken reads 75°C.
  5. Remove the chicken from the air fryer and let it rest for 10 minutes.
  6. While the chicken rests, toss the vegetables with cooking oil, salt, and pepper. Arrange them in a single layer in the air fryer and cook at 180°C for 10 minutes, shaking or stirring halfway through.
  7. Check that the vegetables are cooked through before serving them alongside the chicken. Garnish with rosemary for added fragrance and serve.
