Chicken Saltimbocca

INGREDIENTS

Chicken
  • One by One Chicken Breast
Ingredients
  • 4 Sadia One by One Chicken Breast (halved)
  • 1 tsp salt
  • ½ tsp black pepper
  • Large fresh sage leaves (1 pack, 2 leaves per fillet)
  • Thin slices turkey bacon (1 pack, 1-2 per fillet)
  • 3 Tbsp cooking oil
  • 480ml low-sodium chicken broth
  • 60g stick butter

METHOD

  1. In a large bowl, season Sadia One by One Chicken Breast with salt and black pepper.
  2. Place 2 sage leaves on each fillet and wrap 2 slices of turkey bacon around each fillet (crosswise) to hold the sage in place.
  3. Heat oil in a large pan over medium heat. Add fillets and cook until fully cooked. Transfer to a plate and cover loosely with foil to keep warm.
  4. In the same pan, pour in the chicken broth and simmer for 4-5 minute, until reduced.
  5. Remove the pan from heat. Add the butter and swirl until melted and the sauce looks creamy.
  6. Spoon the sauce generously over each cutlet and serve while warm.
