Taco Soup (Rice Cooker)

  • 1 small onion, chopped
  • 1 tbsp olive oil
  • 250g chicken breast strips (1 pack)
  • 4 cups chicken broth, 
  • 400g diced tomatoes (can)
  • 1 cup brown rice, raw
  • 1 cup corn, drained
  • 2 medium carrots, peeled and diced
  • 1/2 cup black beans, canned


  1. Put onions in a hot rice cooker pot with some oil to get them browning.
  2. Add chicken breast strips to rice cooker and cook until browned.
  3. Add chicken broth, tomatoes, carrots, brown rice, corn and black beans.
  4. Set to cook for ~45min.
