Nilagang Baka (Filipino Beef Soup)

INGREDIENTS
Beef- Sadia Flanken Ribs
- 500g Sadia Flanken Ribs
- 1.2L water
- 1 large onion (quartered)
- 10 black peppercorns
- 1 large potato (peeled and cut into 4-6 pieces)
- 1 ear corn (cut into 4 pieces)
- 1 Tbsp fish sauce
- 1 tsp salt
- 100g green beans (trimmed)
- ½ small cabbage (cut into 4 wedges)
- 2 stalks spring onions (sliced)
METHOD
- Keep Sadia Flanken Ribs sealed and thaw it in the chiller for 24 hours before use. Portion out 500g (about half of the full cut).
- Place the beef, water, onion and peppercorns in a large pot. Bring to a boil over high heat. Skim off any foam that rises to the surface.
- Cover the pot and reduce the heat to low. Simmer for 45 minutes, or until the beef is tender.
- Add the potatoes and corn. Season with fish sauce and salt. Cover and simmer for 6-8 minutes, or until the potatoes are almost tender.
- Add the green beans and cabbage. Simmer for another 3-4 minutes, or until the green beans are tender and the cabbage is softened.
- Turn off the heat, cover and let the soup rest for 2-3 minutes before serving.
