Crispy Sweet and Sour Beef

INGREDIENTS
Beef- Sadia Beef Ribeye
- 600g Sadia Ribeye
- 1 ½ tsp baking soda
- 1 tsp sesame oil
- 1 tsp salt
- 1 tsp grated ginger
- ½ tsp white pepper
- 1 egg white
- 1L cooking oil
- 120ml tomato sauce
- 2 Tbsp hoisin sauce
- 1 Tbsp bean chilli condiment
- 110g sugar
- 1 red chilli (sliced)
- 40g cornstarch
- 1 carrot (peeled and cut into matchsticks)
METHOD
- Keep the Sadia Beef Ribeye sealed and thaw it in the chiller for 24 hours before use. Portion out 600g and slice into 1-inch steaks, then cut into thin strips. Toss the sliced beef with baking soda and let sit for 5 minutes.
- In a bowl, mix sesame oil, salt, ginger, white pepper, and egg white. Add beef and coat well. Cover and refrigerate for 30 minutes.
- Combine tomato sauce, hoisin sauce, bean chilli condiment, sugar, and red chilli in a saucepan. Set aside.
- Mix cornflour with the marinated beef to coat. Heat oil to 180°C and fry the beef in batches for 2-3 minutes or until browned. Drain on paper towels.
- Toss the fried beef with the prepared sauce. Add carrot matchsticks and stir briefly. Serve immediately.
