Crispy Sweet and Sour Beef

Ingredients
  • 600g Sadia Ribeye
  • 1 ½ tsp baking soda
  • 1 tsp sesame oil
  • 1 tsp salt
  • 1 tsp grated ginger
  • ½ tsp white pepper
  • 1 egg white
  • 1L cooking oil
  • 120ml tomato sauce
  • 2 Tbsp hoisin sauce
  • 1 Tbsp bean chilli condiment
  • 110g sugar
  • 1 red chilli (sliced)
  • 40g cornstarch
  • 1 carrot (peeled and cut into matchsticks)

METHOD

  1. Keep the Sadia Beef Ribeye sealed and thaw it in the chiller for 24 hours before use. Portion out 600g and slice into 1-inch steaks, then cut into thin strips. Toss the sliced beef with baking soda and let sit for 5 minutes.
  2. In a bowl, mix sesame oil, salt, ginger, white pepper, and egg white. Add beef and coat well. Cover and refrigerate for 30 minutes.
  3. Combine tomato sauce, hoisin sauce, bean chilli condiment, sugar, and red chilli in a saucepan. Set aside.
  4. Mix cornflour with the marinated beef to coat. Heat oil to 180°C and fry the beef in batches for 2-3 minutes or until browned. Drain on paper towels.
  5. Toss the fried beef with the prepared sauce. Add carrot matchsticks and stir briefly. Serve immediately.
