Braised Chicken With Bitter Gourd

INGREDIENTS

Chicken
  • One by One Mid Joint Wing
For the Marinade
  • ½ pack of One by One Mid Joint Wing
  • 1 Tbsp light soy sauce
  • ¼ tsp white pepper
  • ½ Tbsp cornstarch
Ingredients
  • 300g bitter gourd (cut in half lengthwise, seeds scraped out, sliced into bite-sized pieces)
  • 1 inch ginger (thinly sliced)
  • 2 Tbsp cooking oil
  • 2 Tbsp minced garlic
Seasoning Mixture
  • 1 Tbsp light soy sauce
  • 1 Tbsp oyster sauce
  • 1 tsp sugar
  • ¼ tsp salt
  • ¼ tsp white pepper
  • 240ml water
  • 1 tsp fermented black beans (rinsed and drained)
  • 1 tbsp fermented bean paste
Thickening (Optional)
  • 1 tsp cornflour mixed with 1 Tbsp water

METHOD

  1. Combine Sadia One by One Mid Joint Wing with the marinade ingredients and set aside for at least 30 minutes.
  2. Rub bitter gourd with a little salt, blanch in boiling water for 1 minute, then rinse under cold water.
  3. Heat cooking oil in a wok over medium-high heat. Sauté half the garlic and ginger until fragrant. Add the marinated chicken and fry for about 3 minutes, until the chicken is partially cooked. Remove and set aside.
  4. Sauté the remaining garlic and ginger until lightly browned. Stir in the fermented bean paste and black beans. 
  5.  Add bitter gourd, then return the chicken to the wok. Mix evenly and continue cooking for a minute.
  6. Pour in the seasoning mixture. Stir well and bring to a boil.
  7. Lower the heat, cover and simmer for about 20 minutes or until the chicken is cooked through and tender.
  8. If desired, add the cornstarch slurry and toss gently until the sauce thickens. Dish out and serve hot.
