Feta & Spinach Stuffed Chicken

INGREDIENTS

Chicken
  • One by One Chicken Skinless Breast
Ingredients
  • 4 Sadia One by One Chicken Skinless Breast
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 Tbsp cooking oil
For the Filling
  • 1 Tbsp cooking oil
  • 2 garlic cloves (minced)
  • 150g fresh spinach
  • 100g feta cheese (crumbled)
  • 1 Tbsp cream cheese
  • ½ tsp dried oregano
  • ½ tsp paprika
  • Salt and pepper, to taste
For the Sides
  • 400g baby potatoes (halved)
  • Cooking oil
  • Salt and pepper, to taste
  • Salad greens (washed and drained)

METHOD

  1. Heat cooking oil in a pan over medium heat. Add garlic and saute until fragrant.
  2. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly, then mix with feta, cream cheese, oregano, paprika, salt, and pepper.
  3. Slice a pocket into each Sadia One by One Chicken Skinless Breast (do not cut all the way through). Season with salt and black pepper. Stuff each breast with the spinach and feta mixture.
  4. Heat cooking oil in a pan over medium heat. Add the stuffed chicken and cook for 6-7 minutes per side, until golden brown and fully cooked through. Set aside.
  5. In a fresh bowl, toss baby potatoes with a bit of oil, salt and pepper. Air fry at 200°C for 25-30 mins until golden and slightly crispy.
  6. Arrange the cooked chicken on a plate, alongside salad greens and baby potatoes. Serve immediately.
