            Basil & Tomato Pesto Chicken Pasta

INGREDIENTS
Chicken- One by One Chicken Breast Skinless
- 1 Sadia One by One Chicken Breast Skinless (grilled & sliced) 250g pasta (spaghetti, penne, or fusilli)
- 1 cup fresh basil leaves
- 2 cloves garlic
- 1⁄4 cup Parmesan cheese 1⁄4 cup pine nuts or cashews 1⁄2 cup olive oil
- 1 cup cherry tomatoes (halved) Salt & pepper to taste
- 1⁄2 tsp chili flakes (optional)
METHOD
- Cook pasta according to package instructions. Drain and set aside.
- In a blender, combine basil, garlic, Parmesan, nuts, and olive oil. Blend until smooth. Season with salt & pepper.
- Grill Sadia One by One Chicken Breast Skinless on a grill pan with a little olive oil. Slice thinly.
- In a pan, sauté cherry tomatoes for 2 minutes. Add cooked pasta and toss with basil pesto.
- Add grilled chicken slices and mix well. Garnish with extra Parmesan and chili flakes.
