Chicken Franks & Veggie Minestrone Soup

Ingredients
  • 4-5 Sadia Chicken Franks (sliced into coins) 1 tbsp olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 carrot (diced)
  • 1 zucchini (diced)
  • 1⁄2 cup green beans or peas
  • 1 cup canned diced tomatoes 1⁄2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt & pepper to taste
  • 1 litre chicken or vegetable stock
  • 1⁄2 cup small pasta (elbow, shell, or ditalini)
  • Optional: Grated Parmesan & fresh parsley for garnish

METHOD

  1. In a large pot, heat olive oil. Sauté onion and garlic until fragrant.
  2. Add carrot, zucchini, and green beans. Cook for 4-5 minutes until slightly softened.
  3. Stir in diced tomatoes, oregano, basil, salt, and pepper. Simmer for 3 minutes.
  4. Pour in the stock and bring to a boil. Add pasta and cook until just tender (check packet instructions).
  5. Toss in sliced Sadia Chicken Franks and let simmer for another 5 minutes.
  6. Ladle into bowls and top with grated Parmesan and parsley, if desired.
