Chicken Franks & Veggie Minestrone Soup

INGREDIENTS
Chicken- Chicken Franks
- 4-5 Sadia Chicken Franks (sliced into coins) 1 tbsp olive oil
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 carrot (diced)
- 1 zucchini (diced)
- 1⁄2 cup green beans or peas
- 1 cup canned diced tomatoes 1⁄2 tsp dried oregano
- 1/2 tsp dried basil
- Salt & pepper to taste
- 1 litre chicken or vegetable stock
- 1⁄2 cup small pasta (elbow, shell, or ditalini)
- Optional: Grated Parmesan & fresh parsley for garnish
METHOD
- In a large pot, heat olive oil. Sauté onion and garlic until fragrant.
- Add carrot, zucchini, and green beans. Cook for 4-5 minutes until slightly softened.
- Stir in diced tomatoes, oregano, basil, salt, and pepper. Simmer for 3 minutes.
- Pour in the stock and bring to a boil. Add pasta and cook until just tender (check packet instructions).
- Toss in sliced Sadia Chicken Franks and let simmer for another 5 minutes.
- Ladle into bowls and top with grated Parmesan and parsley, if desired.
