Macadamia Chicken Schnitzel

  • 1 small red onion, thinly sliced
  • 1 large beetroot, grated
  • 1/4 purple cabbage, shredded
  • 1 tbsp extra virgin olive oil
  • 100ml apple cider vinegar
  • 1/2 tsp caraway seed, toasted and crushed
  • 1 kg Sadia One by One Chicken Fillet
  • 2 tbsp brown sugar
  • 1 cup macadamia, crushed
  • 3/4 cup panko breadcrumbs
  • 2 eggs, lightly beaten
  • 1/2 cup plain flour
  • Sunflower oil, to shallow fry


  1. Combine ingredients for the salad in a bowl and mix well
  2. Use a rolling pin to flatten Sadia Chicken fillets between 2 sheets of baking paper or lightly pound with a meat mallet
  3. In a bowl, combine sugar, nuts and panko breadcrumbs
  4. Prepare eggs and flour in two separate bowls
  5. Dust the meat in flour
  6. Dip fillets in egg and coat with panko mixture
  7. Heat some oil in a pan over medium-high heat
  8. Cook chicken fillet schnitzels in batches and for 3-5 mins on each side, until golden and cooked through
  9. Drain on paper towels and serve over the salad. Enjoy!
