One-Pan Lemon Herb Chicken Rice

INGREDIENTS
Chicken- One by One Chicken Skinless Breast
- 2 Sadia One by One Chicken Skinless Breast (halved horizontally to make 4 thinner pieces)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 1 tsp dried thyme
- 1 tsp sea salt
- ½ tsp freshly ground black pepper
- 3 Tbsp cooking oil
- 60ml water
- 1 onion (finely chopped)
- 1 tbsp minced garlic
- 2 Tbsp unsalted butter
- 300g jasmine rice
- Juice of 1 lemon
- 600ml chicken stock
- Salt, to taste
- Black pepper, to taste
- Fresh thyme sprigs
- Lemon slices
- Green salad
METHOD
- Place Sadia One by One Chicken Skinless Breast, onion powder, garlic powder, paprika, dried thyme, salt, black pepper and oil in a bowl. Toss until the chicken is evenly coated and set aside.
- Heat a large, deep pan over medium-high heat. Add the chicken and sear for 1-2 minutes on each side, until lightly browned. The chicken should still be raw in the centre. Transfer to a plate.
- Add the water to the same pan and scrape up any browned bits from the bottom. Once most of the water has evaporated, add the onion and garlic. Cook for 1-2 minutes, until slightly softened and fragrant.
- Add the butter and stir until melted. Add the jasmine rice and stir to coat the grains.
- Add the lemon juice and chicken stock. Stir well and bring to a boil. Reduce the heat to low and return the chicken to the pan. Cover and cook for 15 minutes, or until most of the liquid has been absorbed and the chicken is cooked through.
- Remove from heat and rest, covered, for 10 minutes to allow the rice to finish absorbing the liquid.
- Remove the chicken and gently fluff the rice with a spoon. Return the chicken to the pan and garnish with fresh thyme and lemon slices.
- Serve immediately with a fresh green salad, if desired.
