Chicken Fatteh

INGREDIENTS

  • One by One Chicken Breast
Ingredients
  • 2 Sadia One by One Chicken Breast
  • 260g chickpeas (rinsed and drained)
  • 2 Tbsp cooking oil
  • 30g pine nuts
  • 1 large pita bread
  • Salt and black pepper (adjust to taste)
  • 4 garlic cloves (minced)
  • 900g plain whole-milk yogurt
  • 1 Tbsp fresh parsley (chopped)

METHOD

  1. Boil Sadia One by One Chicken Breast until cooked, then shred them.
  2. Place the shredded chicken in a serving dish and top with the chickpeas.
  3. In a large iron skillet over medium heat, dry-toast the pine nuts until golden, about 5 minutes. Transfer to a small bowl and set aside.
  4.  In the same skillet, heat 1 Tbsp oil and add the pita bread. Season with salt and pepper, then toast both sides until golden and crispy, about 8–10 minutes. Transfer toasted pita bread to a medium bowl and break into smaller pieces.
  5. Lower the heat to medium-low. Add 1 Tbsp oil and garlic, cooking until fragrant. Stir in the yogurt and warm gently, ensuring it does not boil.
  6. Pour the yogurt sauce over the chicken and chickpeas and stir to combine. Top with toasted pita, pine nuts, and parsley. Serve immediately.
