Canja de Galinha (Portuguese Chicken Congee)

INGREDIENTS

Chicken
  • One by One Chicken Breast
Ingredients
  • 350g Sadia Chicken Breast (1 large piece)
  • ½ Tbsp cooking oil
  • 1 small onion (diced)
  • 1 garlic cloves (minced) 1⁄2 Tbsp tomato paste
  • 1 sprig fresh thyme (remove leaves from sprig)
  • 180ml chicken stock
  • 1 cup uncooked white rice
  • 1 ½ large carrots (peeled and sliced)
  • 1 celery stalk (diced)
  • 1 potato (peeled and diced)
  • 700ml water
  • Salt and pepper to taste

METHOD

  1. Season Sadia One by One Chicken Breast with salt and pepper. Set aside.
  2. In a large pot, heat cooking oil over medium heat. Sauté garlic until fragrant.
  3. Add chicken and brown both sides. Then, add tomato paste, thyme, and stock. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes or until chicken is cooked through.
  4. Shred the chicken in the pot using two forks.
  5. Add rice, vegetables, and water. Let it simmer uncovered for about 10-15 minutes, or until rice and vegetables are tender.
