
Canja de Galinha (Portuguese Chicken Congee)

INGREDIENTS
Chicken- One by One Chicken Breast
- 350g Sadia Chicken Breast (1 large piece)
- ½ Tbsp cooking oil
- 1 small onion (diced)
- 1 garlic cloves (minced) 1⁄2 Tbsp tomato paste
- 1 sprig fresh thyme (remove leaves from sprig)
- 180ml chicken stock
- 1 cup uncooked white rice
- 1 ½ large carrots (peeled and sliced)
- 1 celery stalk (diced)
- 1 potato (peeled and diced)
- 700ml water
- Salt and pepper to taste
METHOD
- Season Sadia One by One Chicken Breast with salt and pepper. Set aside.
- In a large pot, heat cooking oil over medium heat. Sauté garlic until fragrant.
- Add chicken and brown both sides. Then, add tomato paste, thyme, and stock. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes or until chicken is cooked through.
- Shred the chicken in the pot using two forks.
- Add rice, vegetables, and water. Let it simmer uncovered for about 10-15 minutes, or until rice and vegetables are tender.
