Rice Cooker Chicken Frittata

  • 3-4 eggs
  • 1 cup of vegetable, chopped or sliced
  • 1/2 cup of cheese
  • salt and pepper to taste
  • 2 x  diced pepper grilled chicken breast
  • bread toast (optional)


  1. Spray inside of rice cooker with non-stick cooking spray.
  2. Separately, heat up chicken breast according to microwave instructions
  3. In a large bowl, beat the eggs.
  4. Add in the vegetables and chicken
  5. Salt and pepper according to taste.
  6. Pour mixture into rice cooker. Sprinkle cheese evenly on top.
  7. Cover the lid of the rice cooker and press the "cook" button.
  8. Cook the frittata for approximately 15 mins or until the eggs are set.
  9. When cooked, transfer frittata carefully with a spatula onto a plate.
  10.  Cut into slices and serve with toast (optional)
