
Chicken Broccoli Alfredo

INGREDIENTS
Chicken- One by One Chicken Breast (Skinless)
- 2 Sadia One by One Chicken Breast (cut into bite sized strips)
- 250g penne
- 300g broccoli (cut into florets)
- 4 Tbsp unsalted butter
- Salt and pepper to taste
- 4 garlic cloves (crushed)
- 2 Tbsp multi-purpose flour
- 350ml evaporated milk
- 30g Parmesan cheese (grated)
METHOD
- Cook penne according to packaging instructions. Add broccoli during the last 5 minutes. Reserve 240ml of pasta water, then drain and set aside.
- In a large pot, melt 1 Tbsp butter over medium-high heat. Add Sadia Chicken Breast, salt, and pepper. Cook until chicken is done, then set aside.
- In the same pot, melt remaining butter. Add garlic, then stir in flour and cook until dark golden. Slowly whisk in evaporated milk. Simmer for 3 minutes until thickened.
- Stir in Parmesan cheese and salt. Return chicken, penne, and half of the broccoli to the pot. Mix well until the brocolli is lightly mashed and combined. Add reserved pasta water if needed to loosen the sauce.
- Add the remaining broccoli to the pot to enhance the crunch, then serve.
