Rosemary Garlic Roast Chicken

Ingredients
  • 4 Sadia Chicken Drumsticks
  • 3 tbsp olive oil
  • 1 tbsp butter (melted)
  • 3 cloves garlic (minced)
  • 2 sprigs fresh rosemary (or 1 tsp dried) 1 tsp dried thyme
  • 1⁄2 tsp paprika
  • 1⁄2 tsp black pepper 1⁄2 tsp salt
  • 1/2 lemon (sliced)
  • 1 cup baby potatoes (halved)
  • 1 cup carrots (chopped)

METHOD

  1. Preheat oven to 200°C.
  2. In a bowl, mix olive oil, melted butter, minced garlic, rosemary, thyme, paprika, salt, and pepper.
  3. Rub the mixture all over the Sadia Chicken Drumsticks and let marinate for 30 minutes (or overnight for deeper flavour).
  4. Place chicken on a baking tray lined with parchment paper. Add baby potatoes and carrots around the chicken.
  5. Bake for 40-45 minutes, turning once halfway, until chicken is golden and cooked through.
  6. Serve with roasted vegetables and lemon wedges on the side.
