Chicken Piccata Pasta with Crispy Capers

INGREDIENTS

  • One By One Chicken Fillet
Ingredients
  • 2 Sadia Chicken Fillets (pounded thin) Salt & pepper to taste
  • 1⁄2 cup all-purpose flour (for dredging) 2 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves (minced)
  • Juice of 1 lemon
  • Zest of 1⁄2 lemon
  • 3/4 cup chicken stock
  • 2 tbsp capers (drained)
  • 200g spaghetti or linguine (cooked al dente)
  • Fresh parsley (chopped)
  • Grated Parmesan (optional)

METHOD

  1. Season Sadia Chicken Fillets with salt and pepper, then lightly dredge in flour.
  2. Heat olive oil in a pan and cook chicken until golden and cooked through (about 3-4 mins per side). Remove and set aside.
  3. In the same pan, add a touch of oil and fry capers until crispy. Remove and set aside.
  4. In the same pan, melt butter and sauté garlic. Add lemon juice, zest, and chicken stock. Simmer for 3-4 mins.
  5. Slice cooked chicken and return to pan. Simmer in sauce for 1-2 mins.
  6. Add cooked pasta to the pan and toss to coat evenly in the sauce.
  7. Plate the pasta, top with sliced chicken, crispy capers, and parsley. Add Parmesan if desired.
