Chicken Piccata Pasta with Crispy Capers

INGREDIENTS
Chicken- One By One Chicken Fillet
- 2 Sadia Chicken Fillets (pounded thin) Salt & pepper to taste
- 1⁄2 cup all-purpose flour (for dredging) 2 tbsp olive oil
- 2 tbsp butter
- 2 garlic cloves (minced)
- Juice of 1 lemon
- Zest of 1⁄2 lemon
- 3/4 cup chicken stock
- 2 tbsp capers (drained)
- 200g spaghetti or linguine (cooked al dente)
- Fresh parsley (chopped)
- Grated Parmesan (optional)
METHOD
- Season Sadia Chicken Fillets with salt and pepper, then lightly dredge in flour.
- Heat olive oil in a pan and cook chicken until golden and cooked through (about 3-4 mins per side). Remove and set aside.
- In the same pan, add a touch of oil and fry capers until crispy. Remove and set aside.
- In the same pan, melt butter and sauté garlic. Add lemon juice, zest, and chicken stock. Simmer for 3-4 mins.
- Slice cooked chicken and return to pan. Simmer in sauce for 1-2 mins.
- Add cooked pasta to the pan and toss to coat evenly in the sauce.
- Plate the pasta, top with sliced chicken, crispy capers, and parsley. Add Parmesan if desired.
